This recipe was given to me in a precious, hand-illustrated booklet by my dear friends Clara and Robin who know of my love for apple cider.

  1. Add ice to a cocktail shaker and pour over the Pommeau, vermouth, cognac and bitters. Stir well.
  2. Strain into an old-fashioned or sour glass.
  3. Flame an orange twist over the drink and us as garnish.
