Tomato Feta Quiche

- Preheat the oven to 180°C fan. Roll out the dough and arrange it in a baking dish to cover the bottom and sides. Line the dough with parchment paper and fill it with a heavy filler such as pie weights or beans. Prebake for 20 minutes, then remove the weights and bake for another 10 minutes.
- Meanwhile, dice the tomatoes, onions and feta cheese. In a bowl, whisk together the eggs, cream, herbs, flour, salt and pepper.
- After prebaking the dough, fill it with the tomatoes, onions and half the feta. Pour over the egg-cream mixture, then sprinkle the remaining feta on top.
- Cover the baking dish and place it in the oven. After 50 minutes, remove the cover, increase the temperature to 210°C and bake for another 10 minutes until the cheese turns gold-brown.
